The Cake

Ingredients:
1 cup Wholemeal Flour
1 cup Plain Flour
2 cups Raw Sugar
2 teaspoons Baking Powder
2 teaspoons Cinnamon
½ teaspoon Salt
4 Eggs (lightly beaten)
1 small tin of Crushed Pineapple (less juice)
8oz Carrot
not quite 1 cup Canola Oil
Walnuts - optional

Directions:
1. Preheat oven to 180˚c
2. Sift dry ingredients together
3. Mix in Canola Oil until there are no dry lumps
4. Add beaten eggs, crushed pineapple and carrots (and walnuts if you choose)
5. Bake for one hour

When cool, ice with Cream Cheese icing and decorate with diced Dried Apricots and Walnuts or Pumpkin seeds.

Cream Cheese Icing

Ingredients:
50g Softened Butter
2 cups Icing Sugar
125g Cream Cheese (softened)
1 teaspoon Vanilla Essence

Directions:
1. Mix butter and Cream Cheese until there are no lumps of butter
2. Gradually add Icing Sugar under smooth
3. Ice

(You can add some lemon juice to taste if you want a lemony flavour)
