![]() The CakeIngredients:
1 cup Wholemeal Flour 1 cup Plain Flour 2 cups Raw Sugar 2 teaspoons Baking Powder 2 teaspoons Cinnamon ½ teaspoon Salt 4 Eggs (lightly beaten) 1 small tin of Crushed Pineapple (less juice) 8oz Carrot not quite 1 cup Canola Oil Walnuts - optional Directions: When cool, ice with Cream Cheese icing and decorate with diced Dried Apricots and Walnuts or Pumpkin seeds.
Cream Cheese IcingIngredients:50g Softened Butter 2 cups Icing Sugar 125g Cream Cheese (softened) 1 teaspoon Vanilla Essence Directions: (You can add some lemon juice to taste if you want a lemony flavour)
